Tempeh BLT’s



8 slices of your favorite multigrain or whole grain bread, toasted

2 tbsp oil of choice, or liberal amounts of cooking spray

1 package tempeh bacon (I like Lightlife brand Smoky Tempeh Strips)

1 tomato, sliced

4 leaves romaine lettuce – the hearts are great because they add more crunch

1 small avocado

2 tbsp vegan mayonnaise

1 bunch fresh dill

Salt and pepper

Pan-fry the bacon, about 2-3 minutes each side, or until dark brown and crisp. Set aside to cool on a brown paper bag or paper towel. Cut the avocado in half, remove pit, and squeeze the “meat” out into a small food processor or blender. Add the vegan mayo and dill, and blend until smooth and creamy. Lay out your 8 pieces of toast and spread each piece with the avocado mayo. Then layer the bacon, lettuce, and tomato, and sprinkle with salt and pepper, add the top piece of slathered toast, and you’ve got yourself one heck of a sandwich!! YUMMMM!
